I am super excited about having an oven after going almost 2 years without in Hong Kong. My first baking experiment was banana bread to use up some ripe bananas we had. I found this great recipe online and it was delicious!

4 ripe bananas, mashed
1 1/2 cups all-purpose flour
1/2 cup butter, melted
3/4 cup sugar
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon vanilla
1. Preheat oven to 180ºC.
2. In a mixing bowl, combine mashed bananas with butter.
3. Add in eggs and vanilla, and mix.
4. Add in sugar, baking soda and salt, and mix.
5. Add flour last and mix well.
6. Pour mixture into a greased and floured bread loaf pan (or muffin tin!).
7. Bake for 1 hour or so until golden
