Horrible horrible horrible day at work today.... :(  I haven't had a bad one like this in a while so it has been a bit depressing... Perhaps baking these delicious looking breakfast bars from Nigella (I am a sucker for a good muesli slice) will help to ease my woes (or at least the whole can of condensed milk added to them might!) Nigella's Breakfast Bars from Nigella Express 1 can condensed milk 2 1/2 cups rolled oats (not instant) 1 cup shredded coconut 1 cup dried cranberries 1 cup mixed seeds (pumpkin, sunflower, sesame) 1 cup natural unsalted peanuts 1. Preheat the oven to 150 degrees and oil a baking pan or just use a disposable aluminum foil one. 2. Warm the condensed milk in a large pan. 3. Meanwhile, mix all the other ingredients together and add the warmed condensed milk, using a rubber spatula to fold and distribute. 4. Foodie Bubble - Banana love

I am super excited about having an oven after going almost 2 years without in Hong Kong.   My first baking experiment was banana bread to use up some ripe bananas we had.  I found this great recipe online and it was delicious! Unfortunately no photos - probably should start some of my own blog photography! Super easy Banana Bread  Servings: 1 loaf Preparation time: 15 minutes Bake time: 1 hour Ingredients 4 ripe bananas, mashed 1 1/2 cups all-purpose flour 1/2 cup butter, melted 3/4 cup sugar 2 eggs, beaten 1 teaspoon baking soda 1 teaspoon vanilla Directions 1. Preheat oven to 180ÂșC. 2. In a mixing bowl, combine mashed bananas with butter. 3. Add in eggs and vanilla, and mix. 4. Add in sugar, baking soda and salt, and mix. 5. Add flour last and mix well. 6. Pour mixture into a greased and floured bread loaf pan (or muffin tin!). 7. Bake for 1 hour or so until golden
