Horrible horrible horrible day at work today.... :( I haven't had a bad one like this in a while so it has been a bit depressing...
Perhaps baking these delicious looking breakfast bars from Nigella (I am a sucker for a good muesli slice) will help to ease my woes (or at least the whole can of condensed milk added to them might!)
Nigella's Breakfast Bars from Nigella Express
2. Warm the condensed milk in a large pan.
3. Meanwhile, mix all the other ingredients together and add the warmed condensed milk, using a rubber spatula to fold and distribute.
4. Spread the mixture into the oiled or foil pan and press down with a spatula or, better still, your hands (wearing those disposable latex CSI gloves to stop you from sticking) to make the surface even.
5. Bake for 1 hour, remove, and after about 15 minutes, cut into four across and four down, to make 16 chunky bars. Let cool completely.
PS: These did turn out delicious. Me and the boy loved them. I amended the recipe a bit as I didn't have any coconut and I just used dried cranberries, flaked almonds and oats. Nigella you are a goddess. Yummy and was indeed very therapeutic!!
